Our sourdough is made the traditional way: with our homemade starter, fresh-milled flour, water, and salt. That's it. No commercial yeast, no dough conditioners, no shortcuts. We use only 3 ingredients: house-milled wheat, water, and salt.

Getting Started

Our starter has been cultivated and maintained over years, creating the complex flavors and natural leavening that define true sourdough bread. Unlike commercial yeast packets, our homemade starter has developed its own unique character over time, contributing complex flavors you can't replicate any other way.

A sourdough starter is a living culture of wild yeast and beneficial bacteria that naturally occur in flour and the environment. We feed our starter daily with fresh-milled flour and water, keeping it active and healthy. This starter is what makes our bread rise and gives it that distinctive tangy flavor and chewy texture.

Why Sourdough?

The slow fermentation develops deeper flavors, improves digestibility, and creates the open, irregular crumb structure that sourdough lovers appreciate. Long fermentation allows the natural enzymes in the dough to break down complex starches and proteins, making the bread easier to digest. It also develops the complex, tangy flavor that defines great sourdough.

The fermentation process partially breaks down gluten and phytic acid in the wheat, making the bread easier to digest. Many people who struggle with commercial bread find they can enjoy true sourdough without discomfort. That said, our bread still contains gluten and is not suitable for those with celiac disease.

Taking Our Time

Time is our most important ingredient. Our sourdough undergoes a long, cold fermentation process. After mixing, the dough ferments for an extended period—typically 24 to 48 hours depending on the loaf.

While commercial bread might rise in just a few hours, we believe good bread can't be rushed. We could speed up the process with commercial yeast and dough conditioners, but we'd lose the flavor, texture, and health benefits that come from patient, traditional fermentation.

We think it's worth the wait.
